Ingredients:
Salad
– Greens of your choice – (lettuce) – amount based on how green you want this to be
– 1 medium tomato, diced
– 1 medium onion, diced
– Additional options: cucumber, cherry tomatoes, sautéed mushrooms, capsicum
Salad Dressing:
– Juice of 1/2 lemon
– Chilli flakes and oregano
– 1/2 tsp honey
Chicken Marinade:
– 250g boneless chicken (or 2 eggs or paneer as an alternative)
– 3 tbsp dahi
– Juice of the other half of the lemon
– Hot sauce of your choice (spiciness, if u want, can skip)
– Cajun powder / piri piri / garam masala
For Crisps:
– 1 roti (tortilla wrap or toasted bread work too)
– Butter
– Optional toppings: any cheese (feta adds a tartness), piri piri (because, just), nuts (helth)
Steps:
1. Prep for the Salad:
– In a bowl, combine the greens, diced tomato, and onion.
– In a separate bowl, whisk together lemon juice, chili flakes, oregano, and honey to create the dressing.
– Pour the dressing over the salad mix and toss gently to coat evenly.
2. Marinate the Chicken or Scramble your Eggs:
– Cut the chicken into bite-sized pieces or
Prep the eggs by whisking with a bit of milk (can add chopped spinach and mushrooms).
– In a bowl, mix dahi, hot sauce, and Cajun powder.
– Add the chicken to the marinade, coat evenly.
– Allow to marinate for at least 30 minutes.
3. Cook the Chicken (or Eggs):
– In a frying pan, melt butter over medium heat.
– Add the marinated chicken pieces and cook for 2-3 minutes on each side until cooked and golden brown.
– If using eggs, cook until scrambled and fully set orrr make it into an omlette.
4. Prepare the Crisps:
– Heat a pan and lightly toast the roti / tortilla wrap until crispy.
– Cut the crispy wrap into small, pieces.
5. Assemble:
– To the salad mix, add cooked chicken (or scrambled eggs) > top with the salad mixture > roti pieces > add cheese of choice and piri piri (tis a compulsion).
